Makes 30 Lime, Clove and Coconut Tea Cakes


  • 115g unsalted butter
  • 70g icing sugar, and more for dusting
  • zest of 2 limes
  • 1/4 tsp ground cloves
  • 1 tsp vanilla extract
  • 3 tbsp ground almonds
  • 6 tbsp sweetened desiccated coconut
  • 130g plain flour



  1. Using an electric mixer, beat the butter and icing sugar together until light and fluffy. Beat in the lime zest, cloves and vanilla
  2. Add the coconut and ground almonds. Mix until no dry ingredients are visible. Beat in the flour and salt
  3. Wrap the dough in cling film and leave in the fridge to harden slightly-about 30 minutes
  4. Preheat the oven to 175 degrees C. Line two baking trays with baking paper. Divide the dough into small balls, shaped with your hands. Place the balls on the paper and bake for 15 minutes, just until the cakes are beginning to brown
  5. Let the cakes cool on their trays for a few minutes, then dust them with icing sugar while they are still warm
