Makes 6 large Banana Bread Breakfast Muffins


  • 75g melted butter
  • 250 self-raising flour
  • 1 tsp ground cinnamon
  • 115g caster sugar
  • 1 tsp vanilla essence
  • 2 large, very ripe bananas
  • 2 eggs
  • 125ml milk



  1. Heat the oven to 190 degrees C. Melt the butter and leave aside to cool. Mash the bananas well
  2. Sift the four and cinnamon together into a large bowl. add the caster sugar and mix well
  3. Beat the eggs together, add the vanilla essence, melted butter and milk in a second bowl. Add the mashed banana
  4. Make a well in the centre of the flour mix and add the egg mixture into it, stir roughly with a spatula until its a pasts, don’t over mix
  5. Place muffin cases into a 6 hole tin and fill to 3/4 fill with the mixture
  6. Bake in the oven for 25 minus or until a skewer inserted into the middle of one of the muffins comes out clean-ish
  7. Remove from the oven and place on a wire rack to cool
  8. Serve the muffins slightly warm with creme fresh or a knob of butter
